Miso Glazed Mushrooms

Yield: 2-3 servings


Ingredients

1 lb of shiitake mushrooms
2 tbsp miso paste
2 tbsp mirin
1 tbsp rice vinegar
3 cloves garlic
2 tbsp veg oil
1/2 tsp salt
1/2 tsp pepper
1/2 cup water

Instructions

  1. Prep! Clean and slice the mushrooms, making sure to remove the stems. Mince the garlic.

  2. Heat oil in a large pan over med/high heat. Once the oil is hot, add the mushrooms. Stir and cook until they start to brown and they’ve shrunk abut half their original size (about 10 min).

  3. While the mushrooms cook, make the glaze! In a small bowl, mix together the miso paste, mirin, and rice vinegar. Add the water a tbsp at a time. The glaze should be thick, but easily pourable.

  4. Once the mushrooms are brown, add the garlic, salt, and pepper. Continue to cook until the garlic is fragrant and starts to brown (about 3-5 min).

  5. Pour on the glaze! Stir and cook until the mushrooms have absorbed most of the glaze. If you notice the glaze starts to seize up, just add a tbsp or two of water.

  6. That’s it! Top it with a bit of green onion for some color and serve over rice.
