My Favorite Fried Rice

This fried rice is delicious on it’s own but also takes well to mix-ins like peas, carrots, pork, etc.

Prep Time: 5ish min

Cook Time: 15ish min

Yield: 2-4 servings


Ingredients

4 cups day old rice
2 tbsp soy sauce
3 tbsp dark soy sauce
1 tsp brown sugar
1 tsp pepper
5 cloves garlic
3 tbsp butter
5 sprigs of green onion
1 egg per person

Instructions

  1. Prep! Mince the garlic. Slice the green onion into little disks, making sure to separate the white/light green from the dark green bits.

  2. Make the sauce! In a small bowl, mix together both soy sauces, brown sugar, and pepper until well combined.

  3. Let’s cook! Melt the butter in a large pan over medium/high heat.

  4. Once the butter is melted, add the garlic and light green part of the onion. Cook until garlic just begins to brown.

  5. Add the rice and give it a good stir. Let it hang out for 5ish min.

  6. Add the sauce and stir. Let it cook until rice has absorbed all the sauce. It will start to crisp and develop a deep brown color, about 10-15 min. If you’re adding any mix-ins, now is the time!

  7. Add the dark green part of the onion and give it a final stir.

  8. While the rice is cooking, fry up an egg for each person.

  9. That’s it! Serve the rice while it’s nice and hot, top it with a fried egg, and drizzle it with some chili oil if you’re feelin’ spicy.
