Asian-Style Noodles

Yield: 4-6 servings


Ingredients

4 green onions
3 cloves garlic
1 inch piece of ginger
10 large shiitake mushrooms
1 large carrot
8 oz chinese noodles (I use this brand here)
1/2 cup hoisin sauce
1/4 cup soy sauce
1/4 cup sweet soy sauce
1 tsp rice vinegar
1 tbsp sesame oil
1/2 tsp sriracha
1/2 tsp pepper
1 egg per person
sesame seeds for garnish

Instructions

  1. Prep! Slice the carrots into matchsticks, slice the mushrooms into thick slices, mince the garlic and ginger, and slice the green onion, separating the white and dark green bits.

  2. Heat the sesame oil in a large pan over medium/high heat. Once the oil is hot, throw in the carrots, mushrooms, white parts of the onion, garlic, and ginger. Saute until the mushrooms brown and start to shrink.

  3. While the veg cooks, make the sauce. Mix hoisin, soy, sweet soy, sriracha, and rice vinegar together in a small bowl until fully combined. Set aside.

  4. After you’ve made the sauce, cook the noodles until just shy of done-ness. Drain and rinse in cold water to stop the cooking process.

  5. Once the mushrooms have gotten some color on them, push all the veg to the edge of the pan. Add the sauce right in the middle, and put the noodles right on top of the sauce.

  6. Stir gently and cook until the noodles have absorbed all the sauce and are fully cooked.

  7. While the noodles finish cooking, fry an egg for each person eating with you.

  8. Once the noodles are fully cooked, add pepper, taste and adjust seasoning as needed. Top it off sesame seeds and the green part of the onion.

  9. Transfer the noodles into bowls and finish it off with the fried egg. If you like things spicy, add an extra squeeze of sriracha over the top of everything.

  10. That’s it! Break that yolk and slurp it all up.
