Gnocchi with Creamy Boursin Cheese Sauce

A thick creamy cheese sauce that comes together with minimal effort? Yes please.

Ingredients
1 tbsp butter
2 cloves garlic, minced
1 cup half and half
1/2 cup parmesan cheese, grated
One 5oz package of Cracked Black Pepper Boursin Cheese
One 16oz package of fresh store-bought gnocchi (or make your own! I like this recipe.)
Salt and pepper to taste
Parsley for garnish (optional)

Instructions

  1. Cook the gnocchi according to the package instructions, making sure to save at least 1 cup of the cooking liquid before draining.

  2. Make the sauce! Start by melting the butter in a large skillet over medium heat.

  3. Add the minced garlic and cook until fragrant, about 1-2 minutes. Add the half and half, Boursin cheese, and 1/2 cup of the reserved cooking liquid. Using a wooden spoon, break down the cheese until it melts into the sauce. Stir and turn the heat down to low. Let the sauce bubble and thicken.

  4. Mix in parmesan cheese. If the sauce is too thick, add a little bit of extra cooking liquid until you get the consistency you want. Taste and adjust seasoning as needed.

  5. Add the cooked gnocchi and toss until each gnocchi is covered in sauce. Portion into bowls and garnish with extra parmesan, fresh cracked pepper, and parsley.

  6. Eat & enjoy!
