Easy af Pomodoro

Yield: 4-6 servings


Ingredients

1 lb your fave pasta (I used extra long fusilli)
28oz can of crushed tomatoes (or diced if you like a chunky tomato sauce)
3 garlic cloves
1 tbsp butter
1/2 tsp red chili flake
1/2 tsp sugar
1/4 cup parmesan + more for serving
2 tbsp olive oil
good handful of basil
salt
pepper

Instructions

  1. Prep! Mince the garlic and julienne the basil.

  2. Heat the oil in a large saute pan over medium heat. Once the oil is hot, add the garlic and red chili flake. Cook until garlic is toasty and fragrant. This happens fast, so keep an eye on it. There’s nothing worse than burnt garlic.

  3. Add the tomatoes and sugar. Give it a good stir, then add salt and pepper to taste. Cover and simmer for about 20 minutes.

  4. While the sauce simmers, cook the pasta according to the package. Reserve some pasta water just in case.

  5. After 20 minutes has passed, check on the sauce. It should be slightly thicker and smell fabulous.

  6. Add the butter and basil (make sure to save some basil for garnish!). Stir until butter has melted.

  7. Add the pasta and gently stir. If the sauce is too thick, add some pasta water a tbsp at a time.

  8. Add about 1/4 cup of parm and stir again. Taste, add more salt if needed.

  9. Plate! Garnish with more basil and parm. Eat! This also reheats well if you’re thinking about saving some for a midnight pasta snack.
