Slow Roasted Tomato and Garlic Sauce

This sauce takes a while to cook, but oh boy is it worth it. If you’re a garlic lover, do yourself a favor and make this asap!

Cook Time: 1hr 45min

Yield: 4 cups of sauce (32oz)


Ingredients

3 lbs of tomatoes (I used 10 roma tomatoes but whatever is in season & ripe should work!)
20 cloves garlic, peeled
1 lg white onion, quartered 
1/4 cup olive oil
1.5 tsp salt
1 tsp pepper
1 cup roughly chopped basil
1/4 cup roughly chopped oregano 
pinch of red pepper flakes

Instructions

  1. Preheat oven to 350° F.

  2. Cut the tomatoes in half lengthwise. Add all the ingredients to a roasting pan. Toss so the oil and spices are well distributed. Arrange the tomatoes so they are cut side up.

  3. Roast! Put the pan in the oven and cook for about 1 hour and 30-45 minutes. Rotate the pan about halfway through the roasting process. You can also use tongs to flip over the cloves of garlic and chunks of onion to ensure they don’t burn.

  4. Once everything is finished roasting, transfer everything from the roasting pan to a blender. Blend on medium speed until the sauce is smooth and thick.

  5. That’s it! Taste it and adjust the seasoning as needed. Use it immediately, or can it to use later.
