Roasted Lemon Mafaldine

Obvs you can use whatever pasta shape you want, but I think it tastes 10x better with mafaldine.

Yield: 4-6 servings


Ingredients

1lb mafaldine pasta
2 tbsp butter
1 tsp garlic powder
1 tsp pepper
2 tsp salt
2 lemons
1/2 cup heavy cream
parmesan for garnish

Instructions

  1. Preheat oven to 350°F.

  2. Wrap each lemon in tin foil and put them in the oven until they’re soft &tender, about 20-30 minutes.

  3. Once the lemons are roasted, unwrap them, cut them in half, squeeze out all the juice (pulp is fine, just no seeds!), and set aside.

  4. Prepare pasta according to package, making sure to reserve at least 1 cup of pasta water.

  5. In a large skillet over medium heat, melt the butter. Once the butter is melted, add the lemon juice, garlic powder, salt, and pepper. Mix to combine.

  6. Add the heavy cream and stir until the sauce begins to thicken. If it gets too thick, add a little bit of pasta water at a time.

  7. Add in the cooked mafaldine, toss until each noodle is covered in sauce.

  8. Top with parmesan (optional but why not) and serve immediately.
